This is a very easy recipe and delicious. Tomato Soup is always good for health. Try this and serve hot as a starter or light meal with salad and bread.

- Tomatoes ( 6 medium size, cut into small pieces)
- Carrot (1 medium size, peeled and cut into small pieces)
- Celery (1 stick, cut into small pieces)
- Ginger (1/2 inch, sliced)
- Oil
- Salt
- Sugar (1/2 tsp)
- Black Pepper (1/8 tsp)
- Cumin Seed (1/2 tsp)
- Cumin Seed (1/2 tsp)
- Asafetida (a pinch of)
- Coriander Leaves (finely chopped)
Instructions
- At first heat the oil in a saucepan over medium heat add ginger and fry until lightly brown.
- Then add carrot & celery and fry them 2 to 3 minutes.
- After that add tomatoes, salt, sugar & black pepper. Cook it until tomatoes are soft.
- Let the tomatoes cool, then pour it in the blender and make a paste.
- Heat the oil in another saucepan and add the cumin seed and asafetida.
- When it started cracking add cilantro and stir fry for a minute.
- Then add the tomato paste and 1 cup of water (adjust the water to your taste).
- When the soup boils, turn the flame to low and let it simmer for 3 to 4 minutes or until it will be thick.
- Remove the soup from the oven and garnish with coriander leaves.
