Tomato Soup

This is a very easy recipe and delicious. Tomato Soup is always good for health. Try this and serve hot as a starter or light meal with salad and bread.

Tomato Soup




Ingredients

  • Tomatoes ( 6 medium  size, cut into small pieces)
  • Carrot (1 medium size, peeled and cut into small pieces)
  • Celery (1 stick, cut into small pieces)
  • Ginger (1/2 inch, sliced)
  • Oil 
  • Salt
  • Sugar (1/2 tsp)
  • Black Pepper (1/8 tsp)
  • Cumin Seed (1/2 tsp)
  • Cumin Seed (1/2 tsp)
  • Asafetida (a pinch of)
  • Coriander Leaves (finely chopped)


Instructions

  1. At first heat the oil in a saucepan over medium heat add ginger and fry until lightly brown. 
  2. Then add carrot & celery and fry them 2 to 3 minutes.
  3. After that add tomatoes, salt, sugar & black pepper. Cook it until tomatoes are soft.
  4. Let the tomatoes cool, then pour it in the blender and make a paste.
  5. Heat the oil in another saucepan and add the cumin seed and asafetida. 
  6. When it started cracking add cilantro and stir fry for a minute.
  7. Then add the tomato paste and 1 cup of water (adjust the water to your taste).
  8. When the soup boils, turn the flame to low and let it simmer for 3 to 4 minutes or until it will be thick.
  9. Remove the soup from the oven and garnish with coriander leaves.
